It's Almost Thanksgiving!

Today I decided to link up with 33 Shades of Green for the Tasty Tuesday's link up! Since it's getting close to Thanksgiving there are a few foods that I just LOVE LOVE LOVE and this is one of them - cream corn. Not only is it delicious, it is SUPER easy and tastes great mixed with your mashed potatoes! I'm still getting used to this blog thing so I forgot to take pictures during the process; however, you just throw everything in the crockpot so I'm not sure it would have made for the most exciting pictures anyways :) 

Here is the recipe: 
  • Approximately 2/3 of a bag of the 80oz frozen corn
  • 1 stick of margarine/butter
  • 1 1/2 packages of cream cheese 
Put all of the ingredients in your crockpot on low for about 4 hours stirring occasionally.

(Finished product - half eaten)

NACA 2011

Wow! It has been busy these last few days.

Bright and early Thursday morning I left with a group of 7 students and an intern to head to Covington, KY for an annual trip we take with our programming board to NACA (National Association for Campus Activities). The conference allows students to see a variety of different acts (comedians, bands, singers, balloon people, and so much more) that they may want to bring back to campus. They also get to go to educational sessions and talk about best practices, new ideas, and struggles with other students from other schools. It really is a great experience for them and it is a way for our students to see that they can get involved in similar organizations once they leave the community college.


I honestly couldn't have asked to take a better group of students. They were so excited to be there and seemed to really enjoy themselves (and I did too)!

So after a long ride back home, I spent most of my Sunday laying on the couch watching football (minus the small amount of time I helped Al rake up some leaves). It was a wonderful day - except for the terrible loss of the Lions. Anyways, Happy Monday!

The Furry Love of My Life

I hope everyone had a great weekend! Not a whole lot happened other than lots of laying around watching football (which I might add was pretty wonderful). Since there is nothing exciting to report from the weekend, I give you my furry love!

So I never thought I would say this... but I have a furry love - Waldo, my cat. How can you not love this face?!




I had been begging Al (my fiance) for a dog for awhile now and he would always tell me (being the practical one that he is) that we don't have time for a dog - which is so very true. Not only that, we are always gone and we wouldn't just be able to pick up and leave like we like to. So he told me one day that we could get a cat. Mind you, we couldn't get a cat right away. We had to wait a few weeks to see if I would still want a cat after that time has passed (I often change my mind and can be very indecisive).

I immediately started looking for kittens online and we had mutually decided we wanted a black one and this is who I found. Anyways, he's a little over a year now (so a little bigger than what he is in this picture) but still just as cute :).

On another side note, I need to get back into the habit of reading more often. Any suggestions on good books to read?

My First Post

So... it's about that time. I created this blog WEEKS ago but have yet to create my first post. It's a little nerve wracking deciding to put your life out in cyber space since there is absolutely, positively NO WAY TO TAKE IT DOWN (yikes!), yet there is also this sense of relief. So here it goes!


I have, rather recently, become a huge fan of reading blogs and I think it is such a great way to be able to look back and remember all the things that happen in life (especially when my memory isn't that great for some reason) and a great way to find some new ideas (recipes, decorating ideas, things to try, etc.). I also enjoy reading about how life is different in other places (and how much more exciting some peoples lives are than mine).


I thought now would be the perfect time to start blogging with so many exciting changes happening in my life... getting married in May being the main one. I also (last year) graduated with my Master's Degree in Student Affairs and started my first "real life" job. 
Question #1 ALWAYS: No. I am not a professor (although I have taught one college class before). I work in Student Life at the local community college. I am in charge of planning the large campus events, advise the programming board, work with orientation, and other random things (other SA professionals will know what I mean by "random"). There is always something random going on around here. But, that is what I love about my job - most of the time. 


So to celebrate that it's Friday... I give you my first blog post :)
